The Wwise 2022.1 says "not for production" but the game I'm working on won't be finished for a long time so is it okay to go ahead and use 2022.1 and just update it to the full version when it's released? Or is it better for me to start with an older version and update to 2022 after the release?

If you can wait for a couple weeks. Wwise 2022.1.0 should be released sometime in November. 

The beta preview builds are labeled "not for production" because:

  • There are certain elements that are not stable, that could introduce delays in your production
  • There are missing features

If you really wish to use the 22.1 features now, you could try the preview on a development branch, and update later. Otherwise, starting with 21.1 and migrating to 22.1 should also be fine.
